Located in the heart of DC’s Bloomingdale neighborhood, établi is the latest venture from seasoned restaurateurs Kathleen Davis and Thomas Boisvert. établi, French for “established,” aims to create an environment where guests can explore wine from around the globe and cultivate their palate. We believe in the adage de gustibus non est disputandum, “in matters of taste, there can be no dispute,” and encourage guests to find the right wine for them. Whether it be a Pinot Noir from Oregon’s famous Willamette Valley, a fizzy Txakolina from the Basque region of Spain, or a bold Saperavi from Moldova, we believe that every corner of the globe has something to offer, and that there is glass of wine out there for everyone.
